![]() I've wanted to make one of these German-style pancakes for quite some time. When apple season rolls around I think I'll be making these more often. The apple I used here had been withering on the kitchen table for a few weeks, so it was either going to be baked into something yummy or thrown on the compost heap. Adapted from Feelgood Eats Makes 1-2 servings 2 tbsp butter 1/2 apple, peeled, cored, and sliced thinly 1/4 cup + 2 tbsp flour 1 tsp sugar 1/2 tsp salt 2 large eggs 1/3 cup milk (I used soy milk) cinnamon powdered sugar maple syrup Preheat oven to 450°F. Melt the butter in an 8-inch cast-iron pan. Remove one tablespoon of the butter and set aside. Add apple slices to the pan and saute over medium heat until soft, 5-7 minutes. Remove from pan and set aside. Whisk together flour, sugar, and salt. Add eggs, milk, and reserved butter and whisk well until batter is smooth. Melt another tablespoon or so of butter in the pan to coat the bottom (so the pancake doesn't stick). Pour batter into pan and arrange apple slices on top. Sprinkle with cinnamon and bake for 15-18 minutes, until puffed and golden. Slide pancake out of the pan and serve immediately, sprinkled with powdered sugar and/or drizzled with maple syrup. |
