These turned out great. They smell like chicken & rice soup and although I didn't personally taste test them (I'm guessing they're a bit bland for lack of salt), the pup has no complaints. Not that I was expecting any from that eating machine. The only thing I would change would be to process the oats and the rice (and any other chunky ingredients) so that the dough is smoother and easier to cut out.

Whole Wheat Pancakes

I have a lot of cookbooks, but I rarely use any of them. I have recipes bookmarked with post-its, but that doesn't really do any good when I have so many more bookmarked online that I can access with a click of my mouse. So, in an effort to give my cookbooks the attention they deserve, last Sunday, in a fit of boredom, I decided to index the recipes I'd bookmarked in an excel spreadsheet. Separate worksheets for each category. I was quite proud of my productivity, and I came across some very yummy-looking dishes that I'd completely forgotten about.

This one, though, was a disappointment, through and through. It's from Ellie Krieger's The Food You Crave. I didn't have any lowfat buttermilk so I replaced it with skim milk soured with cider vinegar, and added a tiny bit of melted butter. Aside from that I made the recipe as written but the batter came out thin and the resulting pancakes were flat and limp. They didn't even have a good flavor. I think I'll stick with my oatmeal pancake recipe.

A hankering for chocolate cake led me to try out this maple syrup sweetened Basic Chocolate Cake recipe. I kinda ruined it with modifications, I think. I replaced some of the flour with coconut flour and used rice milk instead of coconut milk. The result was dense, fudgy, and not too sweet, with a hint of maple flavor that I wasn't really crazy about. Oh well.

I decided to try a peach-rhubarb combination and I think it turned out well. A bit too sweet though. Or something. I would probably cut back on the sugar and butter in the topping. A higher peach to rhubarb ratio would probably be better also.

When I was growing up, Savory Sausage Stew made a frequent appearance on the dinner table during the cold months. It was easy to make and easy to love. I'm not sure why it took me this long to try to make it myself.

I was reminded of the stew when my friend Dom posted a similar recipe on his blog for Meatball Stew. I really had a craving for it after that.

I looked up the recipe in our old family cookbook (which I had published online years ago), and when I saw "condensed onion soup" among the ingredients I was taken aback. I'd never known my mom to use canned soup in any of her recipes, but apparently that's how she made it in 1993. I mentioned this to her yesterday and she said, "Oh we don't make it at all like that anymore."

This is my attempt at recreating that comforting stew and it turned out just right.

It's a good thing there are so many variations!

This recipe appealed to me because it didn't sound overly rich like most cheesy soups are. This is more like potato-broccoli soup with a touch of cheese.

The best part is probably the croutons, which I made from yesterday's loaf of gluten-free bread. The chunks of bread are tossed with olive oil, fine grain sea salt, and whole grain mustard before being toasted til crisp and golden. I would have never thought to use mustard but it really gives the croutons a nice kick.

I'll probably add another potato next time, just to give the soup a bit more body.

» Recipe for Broccoli Cheddar Soup at 101 Cookbooks

Gluten-Free Chocolate Chip Cookies

I used regular chocolate chips (although I think I need to find some that don't have lactose in them), and instead of amaranth flour I used coconut flour, which I've found I really love for baking sweets. I think I could have gotten away with using less flour, because the dough was pretty dry, especially after 36 hours in the fridge. They taste great though. I baked a few right away, then the rest after 36 hours in the fridge, and the only difference I could tell was that the first cookies spread out a little more. The refrigerated dough hardly spread at all.

» Recipe for Gluten-Free Chocolate Chip Cookies

Gluten-Free Biscuits

Yesterday morning for breakfast I thought I would test out this biscuit recipe. I figured that if they turned out well I could replace my old stand-by that I use for biscuit toppings, dumplings for stews, and cobblers.

I used tapioca flour instead of the cornstarch, and sorghum flour instead of soy flour. They were ok, but when I took them out of the oven they had a weird chemical smell. Too much baking powder/soda? Also, the recipe called for way too much liquid. I think I'll use this flour ratio and adapt my old biscuit recipe.

» Recipe for Gluten-Free Biscuits

Warm Red Cabbage & Beet Salad

I bought half a head of red cabbage with no real plans for it, so when I came across this salad at 101 cookbooks I knew what I was having for lunch today.

I finally pulled the last beet from my garden (I had grand plans of growing a lot this year then canning them, but I lost interest and ended up only planting a few) so I added that to the mix.
